COLD BUFFET SELECTION

Persian fetta and roasted beetroot and balsamic with crisp arugula roquette and spinach leaves (V)

Individual Queensland seafood cocktail with citrus, spiced tomato mayo and salad leaves

Spiced lentil and cous cous with chickpeas, spring onion, tomato, chilli, parsley and preserved lemon dressing (V)

WARM BUFFET SELECTION

Tandoori lamb in a rich marinade of roasted spices, tamarind, lime and yoghurt served on a spiced rice salad with cucumber, peppers, chickpeas and minted raita

Warm artisan rolls of olive and ciabatta (V)

Oven roasted and chilled Tasmanian salmon, lemon mayo, Fines herbs with salad of chilli mussels and balsamic infused calamari

Crunchy tempura snapper fillets with fries, house tartare and citrus

Fennel salt crusted slow roasted free range pork with candied apple,

sherry vinegar jus and confit garlic aioli

Barbecued Malaysian chicken cutlets marinated in sweet soy on hokkien vegetable noodles

Braised Brisbane Valley peppered beef, sautéed shallots in a rich brandy and green peppercorn cream sauce

Lamb Rogan josh in a creamy traditional sauce

Green pea and spring onion pilaf (GF, V)

Fresh market vegetables from the Lockyer Valley served roasted and steamed (GF, V)

Assorted bespoke pastries served with vanilla Chantilly cream and wild berry coulis
